Recipe to try...Diet friendly and Kid Friendly

Pasta Primavera with Grilled Turkey Sausage

For our family size and Tony's diet we used 2 turkey sausage links...they grill up very fast and make a nice crispy casing. While that is grilling, put a pot of water on to boil and chop up your veggies. I chopped a yellow pepper, 2 zuchinis, and a 1/2 container of mushrooms...but you can use whatever you like. I sprayed pam in the bottom of my wok and sauteed the garlic in that, then added a tblsp of olive oil to cook the veggies. I added a few tblsp of pasta water when it needed more liquid. I cooked a whole box of whole wheat pasta. I used penne until al dente. I just used jar sauce, but if you have fresh that would be even better. I mixed the sauce, veggies and pasta all together and put the cut sausage on top.

This got 2 thumbs up from our kids...especially after some of the other "diet" dinners we have had.

Mmmmm! That sounds good! We love turkey sausage! We cook it up in the oven, and it makes the outside crispy as well. Might have to try this one soon :)
