Scratch that...menu, that is.

Do you ever write out a menu for the week and then decide nothing really sounds good? Haha, well, I do all the time.

Monday: We had chicken pesto, which is a great all in one easy meal: chicken, bowtie pasta, jar of pesto, zuchini, broccoli, garlic. Sautee chicken pieces and garlic until done, and set aside. Use the same pan to sautee the veggies and garlic. In the meantime, cook bowtie pasta until al dente. Combine pasta, chicken, and veggies into one large bowl and pour the pesto on top. I also save a little pasta water and put a jar full of that too (helps to get every drop of pesto out of the jar) YUMMY! Our kids give this two thumbs up!

Tuesday: I cooked 3 lbs of chicken last night and saved half for dinner tonight. We are having chicken cobb salad.

Ingredients: romaine, iceberg, boiled egg, cheese, bacon, cucumber, tomato, avocado, black bean and corn relish, and the chicken, topped with homemade croutons!

Wednesday: black beans and rice

Thursday: stuffed cabbage (a first for us)

Friday: homemade pizza

Saturday: by special request, we are having pepperoncini roast beef sandwiches (this recipe is the bomb!!!), and potato salad.

I cooked chicken pesto and bowtie pasta last night, too! I'm sitting here eating the leftovers as I read your blog :)

We love that recipe, Heather. You should try the pepperoncini roast beef sandwiches. It is FANTASTIC!
